DRY CHOLE MASALA


Punjabi chole masala pure north India ki famous dish ban gayi hai. Chole bhature ho ya puri samosa ya aalo tikki chole sab ke sath first choice he hote hain.
Chole hum two types se banate hain ek greavy ke sath or dusra dry chole masala. I love both version :)
Koi bhi function ho ya birthday party chole ke bina sabka menu incomplete he rahta hai. White chane tomato onion garlic or Dry indian spices powder khade masalo ke mixture se bane chole bahot he tasty hote hai or bache bade sabki wish list me sabse upar hote hain.

Hum kabhi bhi kisi bhi function me ya kisi party me jate hain to meri sabse pehli choice chole he hote hain.
I love spices or chole he sabse jyada spices hum use karte hain so its my faverite dish.
So lets start cooking..


INGREDIENT

Chickpeas - 150 g (boiled)
Onion - 1 chopped
Tomato - 1
Green chilli - 1
Ginger garlic - 1 tsp
Red chilli powder - 1/2 tsp
Turmeric powder - 1/3 tsp
Coriander powder - 1 tsp
Garam masala - 1/2 tsp
Chana masala - 1/2 tsp
Black paper powder - 1/3 tsp
Cumin powder - 1/2 tsp
Pomegranate seed powder - 1/4 tsp
Asafoetida - 1 pinch
Cumin seeds - 1 tsp
Coriander leaves - 2 tsp
Curd - 2 tsp
Salt - as per taste
Oil - 3-4 tsp

Whole masale --
Black paper - 5-6
Clove - 4
Bay leaf - 1
Cinnamon stick - 1 inch
Black cardamom - 1

METHOD --

Ek pan me 3-4 tsp oil garam karne ke baad usme whole masale cumin seeds asafoetida or ginger garlic add karke garlic ke golden hone tak saute kar lenge. Whole spices se bhi sweet si aroma aane tak hume cook karna hai. Agar aap chahe to whole spices cook hone ke baad ginger garlic add kar sakte hain.

Spices saute karne ke baad isme onion add kar ke achi tarah se 2-3 minute tak saute kar lenge. Onion ke light pink hone ke baad hum isme salt red chilli green chilli coriander powder garam masala powder chana masala or turmeric powder add karenge or achi tarah mix karke 1-2 minute tak cook kar lenge.

Masale cook hone ke baad hum isme tomato or dahi add kar ke tab tak cook kar lenge hab tak dahi puri tarah se dry nahi ho jati or oil masale ke upar agag se dikhayi nahi deta.

Tomato onion ka masala ready hone ke baad boiled chole black paper powder pomegranate powder or cumin powder or coriander leaves add karke mix kar lenge or 4-5 minute tak cover kar ke cook kar lenge.
Garam garam dry chole masala ko roti rice aaloo tikki samose ya bhature ke sath surve kare.
