MOONG DAAL PARATHA



Meri family ke liye Moong daal paratha breakfast ke liye ek best choice hai.   Khane me tasty  spicy or crunchy paratha agar breakfast me mile to kisi ko or kya chaheye.
Moong daal paratha 2 type se banaya jata hai. Ek daal ko boil kar ke aate ke sath mix karke hum dough ready karte hain or fir us dough se parathe banate hain or dusra daal ko overnight soak kar ke hum stuffing ready kar ke parathe banate hain.
Dono ka taste to acha hota hai but khane me stuffed paratha jyada tasty hota hai.

Punjaab or Haryana me breakfast me parathe bahot jyada banaye jate hain.  Or agar parathe stuffed ho or sath me mile fresh makhan to is se best to kuch ho he nahi sakta :p

Moong daal health ke liye bhi achi hoti hai or tasty bhi to aaj banate hai tasty or crispy moong daal parathe...

INGREDIENT

Wheat flour dough - for making paratha
Yellow moong daal - 1 cup
Onion - 1
Green chilli - 1
Red chilli - 1/2 tsp
Turmeric powder - 1/3 tsp
Coriander powder - 1/2 tsp
Garam masala - 1/2 tsp
Dry fenugreek leaves - 1/2 tsp
Cumim seeds - 1tsp
Asafoetida - 1 pinch
Thyme - 1/4 tsp
Salt - as per taste 
Ghee - 4-5 tsp

METHOD --





 daal ko overnight soak karke extra pani nikal kar mixrer me hulka sa grind kar lenge ya hath se bhi thoda sa mash kar sakte hain. Hume daal ka paste nahi banana hai bas isko hulka sa mash karna hai taki hume stuffing me koi problem na aaye.



 stuffing ready karne ke liye sabse pehle ek pan me 1tsp ghee garam karke hum usme cumin seeds asafoetida thyme add karke crackle hone tak cook karenge. Sirf color change hone tak he hume cook karna hai dhayan rahe he heeng jale nahi. Otherwise taste kharab ho jaega parathe ka.

 Jeera golden hone ke baad hum isme onion add karke color change hone tak cook kar lenge. Onion ko transparent hone me 1 minute ka time lagta hai. Hume overcook nahi karna hai onion ko hulka crunchy he rakhna hai.


 onion cook hone ke baad mesh ki hui yellow daal add karke dry spices add kar lenge. Dhayan rahe ki raw moong sticky hoti hai bahot jyada so gas flame ko low he rakhen or continue chalate rahe. Jaise jaise daal cook hoti jaegi ye pan se apne aap alag hoti jaegi. It means humari daal cook ho gyi hai or stuffing ready hai.


 Ready kiye hue dough se ek ball nikal kar round roll kar le. Roti ko center se moti or corners se patli rakhna hai taki roll karte time center se stuffing bahar na nikle. Ek spoon bhar ke stuffing roti me bhar le.

 Roti ko sides se utha kar sabhi sides se achi tarah se bandh kar lenge. Agar aap is tarah se paratha nahi bana sakte to 2 same size ki roti bana kar ek per stuffing spread kar ke dusri roti upar se rakh kar bhi paratha bana sakte hain.


 Stuffed ball ko sukhe aate se coat kar ke hath se hulka sa press kar le taki stuffing achi tarah se set ho jaye or roll karte time bahar na nikle. Ab roller se parathe ko roll kar le. Kyuki humara stuffing ka masala dry hai isliye ye easily roll ho jata hai.

 Tawa garam karke roll kiya hua paratha tawa per dale or ek side se half cook hone tak sek le. Ek side se cook hone ke baad parathe ko palat kar ghee laga le or dusri side se bhi aise he ghee lga kar golden or crispy hone tak cook kar le.

Aapka crispy and healthy moong daal paratha ready hai. Curd ya pickle or green chutni ke sath surve kare.
