GOBHI KA ACHAAR



Pickle ke bina koi bhi plate incomplete he lagti hai. Mere father ko khane ke sath me pickle humesha chaheye wo bhi less oil wala. Winters start hote he market me bahot sari cauliflower aa jati hai. So aaj maine apne father ke liye bhi less oil wala gobhi ka achaar banaya jo ki bahot he spicy and tasty bana. mere father ko mera pickle itna jyada pasand aaya ki unhone usi din se us pickle ko khana start kar diya 😆
Jab bhi hum market se pickle lekar aate hain to usme pickle kum or oil jyada hota hai jo mostly peoples ko pasanad nahi hota. Mere father bhi unhi me se ek hain jinhe pickle to khana but oil nahi chaheye. So un sab pickle lovers ke liye humare paas hai less oil wale pickles ki recipe jo tasty or easy  bhi hai.
Gobhi ka achaar banana bahot he easy hai. Bahot sare log jab pickle banate hain to vegitables ko boil kar ke pickle banate hai.
Mere ek friend ki mom bahot time se pickles bana rahi hain or unka bana hua pickle sabko bahot pasand aati. Jab maine first time unka banaya hua pickle taste kiya tha to mai to unse pack kara ke he le aayi thi. Aunty jab bhi pickle banati hain to vegis ko boil nahi karti wo unko 2-3 din ke liye dhoop me rakhne ke baad hepickle banati hai jis se pickle ki selflife badh jati hai.

INGREDIENT

Cauliflower - 1kg
Coriander seeds - 1 tsp
Dry red chilli - 7-8
Turmaric powder - 1/2 tsp
Cumin seeds - 1 tsp 
Mustarad seeds - 1tsp
fennal seeds - 1 tsp
fenugreek seeds - 1/2 tsp
ginger garlic powder - 1 tsp
Carom seeds - 1 tsp
Salt - as per your taste
Mustard oil - 1/2 cup

METHOD --



Pickle banane se pehle gobhi ko chote chote pieces me cut kar le or acchi tarah se wash kar le. gobhi ko wash karne ke baad 7-8 hour ke liye direct sunlight me rakh de. gobhi ko sunlight me rakhne se uska moisture khatm ho jaega or aapke pickle ki selflife badh jaegi.


Pickle ke liye masala banane ke liye ek blander jar me cumin seeds red chilli coriander seeds fennal seeds fenugreek seeds mustard seeds and carom seeds add kar ke bland kar le. Masala powder ko ek bowl me nikal kar isme salt or turmaric powder add kar ke mix kar le. Pickle banane ke liye humara masala ready hai. Is pickle masale ko aap bland kar ke air tight container me store kar ke bhi rakh sakte hai jis se aapko next time pickle banane me easy hoga.


Ek pan me oil garam kar le. Oil garam hone ke baad usme pickle masala  ginger powder garlic powder add kar ke add kare or mix karke raw smell niklne tak cook kar le.


Masale cook hone ke baad gas flame off kar de. Gobhi add kar ke achi tarah se mix kar le. Vinegar add kar ke mix kar le. Gobhi achaar ko jar me dal k store kar le.



Gobhi achaar ko 6-7 din ke liye rakh de. but daily jar ko shake kar ke achaar ko mix kar le. aapka yummy gobhi ka achaar ready hai.
