RAJMA MADRA


Rajma madra ek traditional Himachali dish hai. Himachal ka koi bhi traditional function ka menu madra ke bina kabhi complete nahi hota. Madra traditional dish hai jise curd ke sath banya jata hai.
Meri kuch friends Himachal se he hai. Two months pehle mai waha ek friend ki wedding attand karne gayi. Wo meri pehli Himachal trip thi. Himachal ek bahot he beautiful state hai. High mountains deep velly jahan bhi dekho bas green he green.
Jitna beautiful ye state hai utne he sweet and honest yha ke rehne wale. Himachi bahot he honest helpful or kind heart hote hain. Or utna he acha yha ka food.  Mai sirf two days ke liye he wahan gyi thi so jyada kuch to try nahi kiya maine but friend ke wedding lunch or dinner me madra sabse pehle surve ki jane wali dish hai. Unhone apne dinner me two main madra dish rajma madra or chole madra surve kiya. So hum unhi two famous dishes me se ek aapke sath share kar rahe hain.

INGREDIENT


Kidney beans -2 cup
Curd - 250 g
Cottage cheese - 2tsp
Red chilli powder - 1/2 tsp
Turmeric powder - 1/2 tsp
Garam masala - 1 tsp
Coriander powder - 1tsp
Cumin seeds - 1 tsp
Asafoetida - 1 pinch
Cinnamon - 1 inch
Mace - 2
Bay leaf - 1
Green Cardamom - 2-3
Black cardamom - 1
Clove - 3
Ghee - 3-4 tsp
Kasuri methi - 1/2 tsp
Salt -as per taste

METHOD --

Ek pan me ghee heat kare. Ghee garam hone ke baad usme whole masale bay leaf green cardamom black paper black cardamom cinnamon mace clove cumin seeds asafoetida add kare or saute kar le.



Ek bowl me curd or half cup water mix kar ke whisk se achi tarah se beat kar ke soft kar le.


Pan me curd add karne se pehle gas ko off kar le. Otherwise curd kharab ho jaegi or water alag ho jaega. So gas off karke curd add mix kar le.


Gas on karke salt red chilli turmaric coriander powder garam masala add kr ke continue mix karte rahe jab tak curd achi tarah se cook nai ho jati.


Curd ko achi tarah se cook hokar solid me change hone me almost 12-13 minute ka time lagta hai. Curd ke cook hone ke baad paneer add kar ke achi tarah se mix kar le.


Paneer ko 2-3 minute tak cook karne ke baad boiled rajma kasuri methi add kar ke mix kar le. 2-3 minute tak cook kar ke gas flame off kar le.


Rich hot and spicy rajma madra ko rice roti naan or puri paratha ke sath surve kare.
