MATAR PANEER



I love paneer or paneer se bani har dish hum sab ki favorite hai. Mostly functions party ya festivals per hum apni family or friends ke liye kuch na kuch special he banana chahte hain. Or matar paneer humari special list me humesha he apni jagah bna leta hai.

Paneer humari health ke liye bhi acha hota hai. Paneer se hume high nutrition milti hai. Aaj hum bana rahe hain Mattar paneer dhaba or restaurent style. Aaj ki ye dish on dimand hum bana rahe hain so humare liye bhi aaj ki ye dish special hai.

Maine mattar paneer banana almost 8-9 year pehle seekha tha. Perfact to nahi tha but ghar me sabko pasand aaya tha. So mere liye to ye dish or bhi jyada special hai. So aaj mai apni ye special or favorite dish aap sab ke sath bhi share karna chahti hu.
So lets start cooking...

INGREDIENT

Paneer - 150 g
Peas - 100 g
Onion - 1
Tomato - 1
Ginger - 1 tsp
Garlic- 1 tsp
Green chilli - 1
Red chilli powder - 1/2 tsp
Turmeric powder - 1/2 tsp
Coriander powder - 1 tsp
Garam masala - 1 tsp
Black paper powder - 1/3 tsp
Cinnamon powder - 1/4 tsp
Pomegranate seeds powder - 1/4 tsp
Dry fenugreek leaves - 2 tsp
Coriander leaves - 2 tsp
Salt - as per taste
Oil - 3-4 tsp
Cream - for garnishing

METHOD --

 Ek pan me 1tsp oio garam kar ke ginger garlic or onion add karke saute kar lenge. Onion ko hume transparent hone tak cook karna hai. Onion ko humne roughly chopped kiya hai kyuki hume isko grind karke paste banana hai.

Onion ke pink hone ke baad hum isme roughly chopped tomato or green chilli add karenge or  tomato ke pullpy hone tak cook kar lenge. Ise cook hone me2-3 minute tak ka time lagta hai.
Cooked tomato onion ke mixture ko thunda hone ke liye rakh denge. Mixture ke thanda hone ke baad mixer me hum isko grind kar ke smooth paste bana lenge.

 ab ek pan me 3-4 tsp oil garam kar lenge. Oil garam hone ke baad usne cumin seeds add karke crackle hone tak cook kar lenge.

 Jeera crackle hone ke baad hum isme tomato onion ka paste or dry slices powder add karke 4-5 minute tak cook kar lenge. Agar jroorat lage to 1-2 tsp pani add karke cook kar sakte hain.

 Masala cook hone ke baad hum isme boiled peas or ek cup pani add karke mix kar lenge. Cover karke 3-4 minute tak cook kare. Aap pani apni choice ke according adjust kar sakre hain.

 Greavy cook hone ke baad paneer pieces or dry fenugeeek leaves add kar ke achi tarah mix karte hue 2-3 minute tak cook kar lenge. Taste kare or seasoning adjust karen.

Coriander leaves mix kar ke 2 minute tak cover karke rakh de. Fresh cream se farnish kar ke roti rice or parathe ke sath surve karen.

DRY CHOLE MASALA


Punjabi chole masala pure north India ki famous dish ban gayi hai. Chole bhature ho ya puri samosa ya aalo tikki chole sab ke sath first choice he hote hain.
Chole hum two types se banate hain ek greavy ke sath or dusra dry chole masala. I love both version :)
Koi bhi function ho ya birthday party chole ke bina sabka menu incomplete he rahta hai. White chane tomato onion garlic or Dry indian spices powder khade masalo ke mixture se bane chole bahot he tasty hote hai or bache bade sabki wish list me sabse upar hote hain.

Hum kabhi bhi kisi bhi function me ya kisi party me jate hain to meri sabse pehli choice chole he hote hain.
I love spices or chole he sabse jyada spices hum use karte hain so its my faverite dish.
So lets start cooking..


INGREDIENT

Chickpeas - 150 g (boiled)
Onion - 1 chopped
Tomato - 1
Green chilli - 1
Ginger garlic - 1 tsp
Red chilli powder - 1/2 tsp
Turmeric powder - 1/3 tsp
Coriander powder - 1 tsp
Garam masala - 1/2 tsp
Chana masala - 1/2 tsp
Black paper powder - 1/3 tsp
Cumin powder - 1/2 tsp
Pomegranate seed powder - 1/4 tsp
Asafoetida - 1 pinch
Cumin seeds - 1 tsp
Coriander leaves - 2 tsp
Curd - 2 tsp
Salt - as per taste
Oil - 3-4 tsp

Whole masale --
Black paper - 5-6
Clove - 4
Bay leaf - 1
Cinnamon stick - 1 inch
Black cardamom - 1

METHOD --

Ek pan me 3-4 tsp oil garam karne ke baad usme whole masale cumin seeds asafoetida or ginger garlic add karke garlic ke golden hone tak saute kar lenge. Whole spices se bhi sweet si aroma aane tak hume cook karna hai. Agar aap chahe to whole spices cook hone ke baad ginger garlic add kar sakte hain.

Spices saute karne ke baad isme onion add kar ke achi tarah se 2-3 minute tak saute kar lenge. Onion ke light pink hone ke baad hum isme salt red chilli green chilli coriander powder garam masala powder chana masala or turmeric powder add karenge or achi tarah mix karke 1-2 minute tak cook kar lenge.

Masale cook hone ke baad hum isme tomato or dahi add kar ke tab tak cook kar lenge hab tak dahi puri tarah se dry nahi ho jati or oil masale ke upar agag se dikhayi nahi deta.

Tomato onion ka masala ready hone ke baad boiled chole black paper powder pomegranate powder or cumin powder or coriander leaves add karke mix kar lenge or 4-5 minute tak cover kar ke cook kar lenge.
Garam garam dry chole masala ko roti rice aaloo tikki samose ya bhature ke sath surve kare.

BESAN LADDO


Koi bhi festival ho or besan ke laddo na ho to indian festival ki celebration adhuri he rahti hai. Winters me haryana or punjaab ke mostly gharon me besan ke laddo ek bade amount me bana kar stock kiye jate hain. Besan ghee sugar or dry fruits se bane se besan ke laddo health ke liye bahot ache maane jate hain. Besan ke laddo banana bahot he easy hai.

Humare ghar me har winters ki starting me jab besan ke laddo bante the to uski khushboo se he sare aas paas ke gharon me pta lag jata tha or hum kadhai ka gas se utarne ka wait krte the taste karne ke liye :)

Diwali aa rahi hai or har ghar me is biggest festival ki taiyariyaan abhi se start ho gyi hongi. To hum bhi apni taiyari start karte hain.. India ki sabse famous or faverite sweet ke sath..


INGREDIENT 

Gram flour - 250g
Sugar - 200 g
Ghee - 150 g
Poppy seeds - 2 tsp
Gong - 2tsp

METHOD --

 Ek heavy bottom ki kadhai me 1tsp ghee garam kare. Ghee garam hone ke baad usme gond add krke mix krenge. Garam ghee me add krte he gong 30 second me he fry ho jaega or aap dekhenge ki ye size me bhi double hokar ekdum light or crispy ho gya hai. Ise hum jaldi he ek bowl me nikal lenge.


 Ab isi kadhai me hum ghee garam karenge or besan aad kar ke achi tarah se mix ka lenge. Besan ko continue chalate rahe. Besan kadhai me lagna nahi chaheye.


 Besan ko continue chalate rahe or color change hone tak cook karte rahe. Jaise jaise besan pakta jaega ghee alag dikhne lagega or besan se khushboo aani start ho jaegi.

  Besan ko same bowl me nikal lenge jis bowl me humne gond fry karke nikala tha or dono ko achi tarah se mix kar lenge. Caster sugar or poppy. Seeds add krke achi tarah se mix kaf lenge or mixture ko thunda hone ke liye rakh denge.


Mixture ke tbunda hone ke baad hum same size ke round laddo bana lenge. I know ke aap bhi meri tarah wait nahi kar sakte ho laddo khane ke liye so lets eat :p

MOONG DAAL PARATHA



Meri family ke liye Moong daal paratha breakfast ke liye ek best choice hai.   Khane me tasty  spicy or crunchy paratha agar breakfast me mile to kisi ko or kya chaheye.
Moong daal paratha 2 type se banaya jata hai. Ek daal ko boil kar ke aate ke sath mix karke hum dough ready karte hain or fir us dough se parathe banate hain or dusra daal ko overnight soak kar ke hum stuffing ready kar ke parathe banate hain.
Dono ka taste to acha hota hai but khane me stuffed paratha jyada tasty hota hai.

Punjaab or Haryana me breakfast me parathe bahot jyada banaye jate hain.  Or agar parathe stuffed ho or sath me mile fresh makhan to is se best to kuch ho he nahi sakta :p

Moong daal health ke liye bhi achi hoti hai or tasty bhi to aaj banate hai tasty or crispy moong daal parathe...

INGREDIENT

Wheat flour dough - for making paratha
Yellow moong daal - 1 cup
Onion - 1
Green chilli - 1
Red chilli - 1/2 tsp
Turmeric powder - 1/3 tsp
Coriander powder - 1/2 tsp
Garam masala - 1/2 tsp
Dry fenugreek leaves - 1/2 tsp
Cumim seeds - 1tsp
Asafoetida - 1 pinch
Thyme - 1/4 tsp
Salt - as per taste 
Ghee - 4-5 tsp

METHOD --





 daal ko overnight soak karke extra pani nikal kar mixrer me hulka sa grind kar lenge ya hath se bhi thoda sa mash kar sakte hain. Hume daal ka paste nahi banana hai bas isko hulka sa mash karna hai taki hume stuffing me koi problem na aaye.



 stuffing ready karne ke liye sabse pehle ek pan me 1tsp ghee garam karke hum usme cumin seeds asafoetida thyme add karke crackle hone tak cook karenge. Sirf color change hone tak he hume cook karna hai dhayan rahe he heeng jale nahi. Otherwise taste kharab ho jaega parathe ka.

 Jeera golden hone ke baad hum isme onion add karke color change hone tak cook kar lenge. Onion ko transparent hone me 1 minute ka time lagta hai. Hume overcook nahi karna hai onion ko hulka crunchy he rakhna hai.


 onion cook hone ke baad mesh ki hui yellow daal add karke dry spices add kar lenge. Dhayan rahe ki raw moong sticky hoti hai bahot jyada so gas flame ko low he rakhen or continue chalate rahe. Jaise jaise daal cook hoti jaegi ye pan se apne aap alag hoti jaegi. It means humari daal cook ho gyi hai or stuffing ready hai.


 Ready kiye hue dough se ek ball nikal kar round roll kar le. Roti ko center se moti or corners se patli rakhna hai taki roll karte time center se stuffing bahar na nikle. Ek spoon bhar ke stuffing roti me bhar le.

 Roti ko sides se utha kar sabhi sides se achi tarah se bandh kar lenge. Agar aap is tarah se paratha nahi bana sakte to 2 same size ki roti bana kar ek per stuffing spread kar ke dusri roti upar se rakh kar bhi paratha bana sakte hain.


 Stuffed ball ko sukhe aate se coat kar ke hath se hulka sa press kar le taki stuffing achi tarah se set ho jaye or roll karte time bahar na nikle. Ab roller se parathe ko roll kar le. Kyuki humara stuffing ka masala dry hai isliye ye easily roll ho jata hai.

 Tawa garam karke roll kiya hua paratha tawa per dale or ek side se half cook hone tak sek le. Ek side se cook hone ke baad parathe ko palat kar ghee laga le or dusri side se bhi aise he ghee lga kar golden or crispy hone tak cook kar le.

Aapka crispy and healthy moong daal paratha ready hai. Curd ya pickle or green chutni ke sath surve kare.

CHEESE CHILLI GARLIC TOAST



Once more.. Tea time snake is here. Its cheesey chilli garlic toast.
Cheese hum sab ka faverite hai spacialy bachon ka. So tea time ki bhookh ke liye mere paas hai ek or crispy cheesy snake garlic ke taste ke sath.
Banane me ekdum easy or khane me crispy and spicy.
So chalo banate hain ek or jhatpat recipe...

INGREDIENT


Bread slices -3
Pizza sauce - 2 tsp
Red chilli sauce - 1tsp
Cheese - 2-3 tsp
Mix hurbs - 1/2 tsp
Garlic powder - 2 pinch


METHOD --



Sabse pehle hume chaheye crispy toast. Maine inko toaster me toast kar liya hai or aap chahen to apne bread slice ko apni choice ke according cut bhi kar samti hajn. Ye aapki dish ko ek acha look dega.



Ab hum in toast per pizza sauce or chilli sauce laga kar knife ki help se achi tarah se spread kar denge. Aap red chilli sauce ki jagah chilli flacks or green chilli sauce ya home made chilli sauce bhi use kar sakte hain.



Ab turn hai iske upar ek layer cheese ki lgane ki. Maine cheese ko barik pieces me cut kiya hai kyuki hum isko microwave me bake karne wale hain so hume jyada hardwork karne ki bhi jroort nahi hai.


 Cheese layer ke baad hum last layer me mix hurbs or garlic powder sprinkle krenge. Maine isme home made garlic powder use kiya hai jo store bought garlic powder se jyada tasty hota hai.



Mix hurb or garlic powder sprinkle karne ke baad hum in toast ko 1 ya 2 minute ke liye microwave me full temperature per bake karenge. Ya jab tak aapka cheese achi tarah se melt nahi ho jata tab tak. Mujhe iske liye sirf 1 minute laga bake karne me.


And aapka easy to make criapy and tasty chees chilli garlic toast ready hai.

GRILLED MAYO SANDWICH



Morning ka jaldi wala breakfast ho ya Evening ki choti choti si bhookh ho ye dish aapki har problem ka solution hai. Bache ho ya bade aajkal aab jaldi me hote hain kisi ko school jane ki jaldi kisi ko collage jane ki jaldi to kisi ko office jane ki jaldi. Is jaldi jaldi me humare paas time nahi hota hai khana banane ka ya aaram se baith ke khana khane ka. Or fir hum road side se ya kahin bahar se khana order karte hain jo ki utna healthy nahi hota jitna humara ghar ka bana hua khana hota hai.

Ye instant sandwich aapki in choti choti jaroort ko pura karne k liye ek dum.sahi option hai. Isko banane ke liye na hume jyada time ki jroort hoti hai or na he jyada mehnat ki.

School ka tifin pack karna ho ya office ka lunch har tifin box ke liye ye healthy meal jhatpat ready hai. Kyuki isme humne tomato orcucumbar bhi add kiye hain jo aapke or aapke bachon ki health ke liye bhi best hain.

To chalo banate hain aaj ka jhatpat tifin box or evening snack..

INGREDIENT 


Bread slice - 4
Tomato - 1
Cucumber - 1 cup
Mayonnaise - 2 tsp
Butter - 1 tsp

METHOD --


Ek bowl me cucumbem or tomato ko cut karke mix kar len. Tomato ke humne seeds nikal ke alag kar diye hain. Tomato liquid ko Waste na kare is ko hum apni kisi dusri dish ya subji me add kar sakte hain.
 cut kiye hue tomato cucumber me hum mayo add kar ke achi tarah se mix kar lenge or sandwich ke liye humari veg mayo stuffing ready hai.


 2 bread slick lekar hum ek slice je upar apni ready ki hui stuffing rakh kar achi tarah.se spread kar lenge.


 Dusri bread slice ko is stuffing wali slice ke upar rakh kar hath se hulka press kar denge taki humari stuffing nikale nahi.duri slices kobhi hum isi tarah se ready kar lenge.


 Ab turn hai humari sandwich ko grill karne ki. Gas par hum ek grill pan ko garam karke us per half tsp butter dal k melt kar lenge or humari sandwich ko is butter ke sath hum dono side se achi tarah se grill kar lenge.



Baki ki bachi hui stuffing ko hum sandwich ke upar rakh kar garnish karenge. Aapki instant veg mayo sandwich ready hai. 


DAL TADKA





Jab bhi hum kahin bahar khana khane jate hain kisi dhaba ya restorent me to hum sabki sabse pehli chioce hoti hai... Punjabi style dal tadka. Chana dal ek spicy se tadke or dher sare ghee ke sath.

Punjaab or haryana ki famous tadka dal sabhi ko bahot pasand hoti h or jo diet or ghee se dhoor nai bhagte ye unke liye to khane ki first choice he hoti hai.

Meri family me bhi sabko ye dal bahot pasand hai. Week me ek ya do baar to humare ghar me ye dal banti he hai. Banane me ek dum easy or khane me utni he jyada tasty.

Ghar me guest aa rahe hain ya fir kuch special banane ka mood hai to is se easy or tasty choice shayud kuch or ho he nai sakti. Whole masale isko ek alug he rich taste or aroma dete hain to ghee or chana aapki health ke liye ache hote hain. Jaisa ki humare Haryana or punjaab me mana he jata hai ghee ko best.
To agar aap bhi dieting se door he rehte ho meri tarah to ye dal tadka jroor try kijiye...


INGREDIENT


Split bengal gram/chana dal - 2 cup
Onion - 2
Tomato - 2
Red chilli powder - 1tsp
Garam masala - 1tsp
Coriander powder - 1tsp
Turmeric powder - 1/2 tsp
Ginger - garlic - 2tsp
Salt - as per taste
Cumin seeds - 1/2 tsp
Black paper powder - 1/3 tsp
Pomegranate seeds powder - 1/3 tsp
Cinnamon powder - 1/3 tsp
Coriander leaves - 2 tsp
Ghee - 2 tsp

For tadka -
Ghee - 3-4 tsp
Red chilly - 2
Cumin seeds - 1tsp
Cinnamon stik - 1inch
Asafoetida - 1/4 tsp
Black paper - 5-6
Bay leaf - 1
Clove - 3-4
Green cardamon - 2
Red chilli powder - 1/4 tsp
Black cardamom - 1


MEHTOD --

 dal ko wash karke soak kr ke rakh le. Agar jaldi me hain or itna time aapke paas nahi hai to garam pani me 3-4 hours ke liye bhigo kar garam jagah per rakh de. Garam pani me soak karne se aapki dal thode time me bhi achi tarah se soak ho jaegi.


 Cooker me dal me thoda sa salt or ek pinch huldi mix karke 2 glass pani dal kar achi tarah se boil kar len. Mere cooker me dal ko soak karne ke baad ek he whistle kafi hoti hai dal ko boil karne ke liye.
 Ab ek heavy kadhai me ghee garam kar len.

 Ghee garam hone ke baad jeera add karen or color change hone tk tadka le.


 Ginger garlic add kre. Maine ginger garlic ka paste nai banaya hai. Is dal ke liye hum ginger garlic ko cut karke he use krenge. Khuki hum isko jitna bada cut krenge humare khane me taste bhi uthna he jyada aata hai.


 Garlic ki raw smell jane tak usko hum paka lenge or onion add kar k usko bhi hum color change hone tak cook karenge.


 Onion ka color change hone ke baad hum tomato add krenge or mix karke 1-2 minute tak cook kar lenge.

 Ab time hai isme masale add karne ka. Sare masale add karke tab tk cook karenge jab tak masale or ghee alag alag na hone lage.


 masale cook hone ke baad hum isme boil ki hui dal hara dhaniya or 1 cup pani add karke mix karenge or 3-4 minute tak cook kar ke gas off kar denge. Dal ko survinvg bowl me nikal lenge.

Ek tadka pan ya normal pan me 3-4 tsp ghee garam karke hum usne whole spices add karenge or high flame per 1 minute tak cook kar lenge. But masale ko jalana nai hai sirf color change hone or rich aroma aane tak cook karna hai.


Ready kiye tadke ko direct dal ke upar daal kar dal ko 20 minute ke liye cover kar denge taki tadke ka aroma dal me achi tarah se mix ho jaye. Aapki spicy dhaba style dal tadka surve karne ke liye ready hai.
