GREEN CHILLI PICKLE


Green chilli pickle is one of my favourite pickle. Me and my father love this chilli pickle...
Jab tak mere father ki plate me chilli na ho unki plate incomplete he rehti hai. so ye green chilli pickle maine specially mere farher ke liye banaya hai.
Green chilli pickle bahot sari alag alag method se banaya jata hai.. like stuffed chilli pickle crushed chilli pickle. Chilli pickle banane ke liye alag alag chilli ka bhi use kiya jata hai small green chilli red chilli achari green chilli and many more...
Ye chilli pickle meri ek aunty ki recipe hai jo apne pickles ke liye bahot he famous hain. Maine bhi unhi ki recipe ko follow karte hue ye pickle ready kiya hai jo shayud unke jaisa to nahi but tasty bahot hai. Ye pickle recipe bahot he easy hai. Less masalo ke sath bhi ye pickle bahot he tasty or spicy hai. and i am sure ki jab aap unki is recipe ko follow kar ke ye pickle banaenge to aap kabhi koi or green chilli pickle recipe try nahi karenge πŸ˜

INGREDIENT

Achari green chilli - 1/2 kg
Turmeric powder - 1/3 tsp
Salt - to taste
onion seeds - 1 tsp
Fennel seeds powder - 1 tsp 
Mustard seeds powder
Fenugreek seeds powder - 1/2 tsp
coriander powder - 1/2 tsp
cumin seeds powder - 1 tsp
Carom seeds - 1 tsp
White vinegar - 4-5 tsp
mustard oil - 1/2 cup

METHOD --

Achari mirchi ko wash kar ke achi tarah se dry kar le. Mirchi ke dry hone ke baad mirchi ko half me cut kare or slit kar le.Chilli ko slit kar ke 2 din ke liye sunlight me rakhe. Chilli ko sunlight me rakhne se chilli ka moisture nikal jaega oe pickle ki self life badh jaegi.


Ek small blander jar me fennel seeds fenugreek seeds cumin seeds mustard seeds add kar ke roughly bland kar le. Masale grind karne ke baad ek pan me oil garam kare. Oil garam hone ke baad salt turmeric powder carom seeds onion seeds and masala powder add kare or saute kar le.


Masale saute karne ke baad chilli add kare or achi tarah se masale ke sath mix kar le. Chilli ko 4-5 minute tak masale ke sath saute kare or gas flame off kar le. Vinegar add kar ke mix kar le.


Pickle ke thunda hone ke baad ek jar me store kar le. 7-8 din baad aapka pickle use karne ke liye ready hai. Pickle ko daily mix karte rahe.

WHITE SAUCE PASTA


Pasta ek Italian cuisine ki ek famous dish hai. Italian pasta ki bahot sari variety or bahot basre flavoure hote hain. White sauce pasta bhi unhi famous italian flavours me se ek hai.
Homemade white sauce pasta banane ke liye aap store bought white sauce kabhi use kar sakte hain. But aaj ki is blog post me hum aap ke liye le kar aaye hain home made white sauce pasta with homemade white sauce.
                                     
White sauce pasta ek bahot he easy and yummy recipe hai jise banane me bahot he less time and efforts lagta hai. White sauce pasta banane ke liye hum panne pasta ka use kar rahe hain aap chahe to aap whole wheet pasta ka bhi use kar sakte hain.
White sauce banane ke liye butter maida and milk ka use kiya jata hai. Homemade white sauce pasta banane keliye aap pasta ko sirf sauce ke sath bhi cook kar sakte hain or pasta ko or jyada yummy and healthy banane ke liye aap usme corn bell paper bhi use kar sakte hain.Aaj ki is post me hum pasta ko white sauce or dry hurbs ke sath he cook kar rahe hain jiski recipe hum aapke sath share kar rahe hain..

INGREDIENT

Panne pasta - 1 cup
Butter - 2 tsp
All purpose flour - 1 tsp
Milk - 1 cup
Salt - to taste
Black paper powder - 1 pinch
Mix herbs - 1/2 tsp
Italian seasoning - 1/2 tsp
Oil - 1 tsp

                                                    

METHOD --



Ek pan me 3 cup water ko 1 tsp oil ke sath boil kar le. boiling water me panne pasta add kare or soft hone tak cook kare. pasta ko overcook na kare otherwise pasta overcook hone ki wajah se flat hone lagega. Pasta ko boiling water me he add kare.


Ek nonstick pan me butter melt kare. Butter melt hone ke baad all purpose flour add kare or saute kar le. Maida ko raw smell disappear hone tak cook kar le.


Maida ke cook  hone ke baad usme boiled and chilled milk add kare or achi tarah se whisk kar le. Milk add karne ke baad sauce ko continue stir kare jab tak sauce smooth and thick nahi ho.

Sauce ke smooth and thick hone ke baad boiled pasta salt black paper powder red chilli flacks mix herbs  Italian seasoning add kare or soft hand se achi tarah se mix kar le.  Pasta ko 3-4 minute tak cook kare or gas flame off kar de.


Ready white sauce pasta ko serving plate me nikal kar mix herbs or Italian seasoning se garnish kare or hot surve kare.

VEGITABLE BURGER


Burger kids se lekar adult tak sabko bahot he pasand hai. And i'm also one of them. But daily oily snacks khana bhi health ke liye harmful hota hai and fat bhi.
Burger ko bahot sari alag alag flavours ke sath banaya jata hia like aloo tikki burger chicken tikki burger green tikki burger and meny more...
Specialy kids ko burger bahot jyada pasand hota hai. So mere paas hai ek aisi healthy burger recipe jo aapke kids ko bhi pasand aayegi or aap bhi khush. Aaj hum lekar aaye hain mix vegitable tikki burger wo bhi cucumber tomato slices ke sath. Cheese jo ki bahot fat rakhta hai so humne cheese ko replace karke different flavours mayonnaise ko use kiya hai jo tasty bhi hai or health ke liye bhi harmful nahi hai.

INGREDIENT

For tikki -
Potato - 1
Cauliflower - 1 cup
Green peas - 1 cup
Green chilli - 2
Ginger paste - 1/4 tsp
Corn flour - 2 tsp
Salt - as per taste
Coriander powder - 1/2 tsp
Black paper powder - 1 pinch
Bread crumb - 3-4 tsp
Oil - for frying

For burger-
Burger bun - 2
Cucumber - 1
Tomato - 1
Lentil leaves - 4
 Veg Mayonnaise - 1/2 cup
Pizza spread mayonnaise - 4 tsp


METHOD --


Vegitable tikki banane ke liye ek hand grinder me peas ginger green chilli cauliflower ko grind kar kar le. Ek bowl me potato crushed peas green chilli cauliflower salt coriander powder corn flour ginger paste black paper powder add kar ke achi tarah se mix kar le.

Ready kiye mixture se tikki bana kar ready kar le. Ek plate me dry bread crumb nikal kar tikki ko bread crumb me achi tarah se coat kar ke 5 minute ke liye set hone ke liye rakh de.


Ek pan me 3-4 tsp oil garam kar le. Oil garam hone ke baad usme tikki ko crisp or golden hone tak  stir fry kar le. kitchen paper per nikal kar extra oil paper per nikal le.


Burger ko assemble karne se pehle burger bun ko dry roast kar lenge. Ek non stick pan me bun ko cut karke dry roast kar ke thoda crispy kar le. Agar aap chahe to bun to grill bhi kar sakte hain .


Burger Bun ko dry roast karne ke baad burger ko assemble kar lete hai. Burger ko assemble karne ke liye sabse pehle buns per pizza sauce ki ek layer lga le. 2nd layer me cucumber slice and tomato slice and salid leaves add kare and vegitable tikki rakh kar veg meyo se topping kare. then dono parts ko assemble kare and toothpic se fix kare.

DUM ALOO


Dum aloo ek bahot he tasty or rich dish hai curd tomato onion masalo ki greavy me fried potato ko cook karke banayi jati hai.
Dum aloo
North India ke Punjab Haryana me bahot famous dish hai. Jo Kashmiri cuisin ki dish hai. Dum aloo banane ke liye baby potato ka use kiya because  dum aloo me whole potato ko hum boil and then fry kar ke curry ke sath cook and surve karte hain.
Meri family ko dum aloo bahot pasand hai. Jab bhi ghar me koi guest aaye ya special occassion ho to dum aloo ek bahot he achi dish hai apne special moment ko or special banane ke liye.

INGREDIENT

Potato - 10
Curd - 1 cup
Onoin - 2 
Tomato - 3
Green chilli - 2
Ginger garlic - 1 tsp
Turmaric powder - 1/2 tsp
Degi mirch powder - 1/2 tsp
Coriander powder - 1 tsp
Garam masala - 1 tsp
Asafoetida - 1 pinch
Dry pomegranate seed powder - 2 pinch
Dry red chilli - 2
Cumin seeds - 1 tsp
Black cardamom - 1
Green cardamom - 2
Bay leaf - 1
Cinnamon stick - 1 inch
Clove - 4-5
Black paper - 7-8
Salt - as per taste
Dry fenugreek leaves - 1 tsp
Green coriander - for garnish
Ghee - 3 tsp

METHOD --



Baby potato ko boil kar ke peal kar le. Potato ko fry karne se pehle ek folk ki help se potato ko pierce kar le jis se potato ko cook karte time usme masale achi tarah se mix ho jaye.


Dum aloo banane ke liye potato ko deep fry kiya jata hai but yahan hum potato ko deep fry na kar ke potato ko stir fry karenge because deep fry karne se potato jyada oily ho jate hain or mostly peoples ko oily food pasand nahi aata so ek pan me 1 tsp ghee garam kar ke potato ko 4-5 minute ke liye saute kar le.


Same pan me chopped onion ginger garlic add kare or saute kar le jab tak tomato or onion soft na ho. ye step totaly optional hai aap direct onion and ginger garlic ka paete bana le. But mai onion ko paste karne se pehle unko saute karti hu because mujhe raw onion paste ki smell bilkul nahi pasand so mai onion paste banane se pehle same oily pan jisme humne potato saute kiye the onion ko bhi saute kar ke unka paste bana le. Is se aapki greavy ko ek rich color or taste bhi milta hai.


Onion and ginger garlic paste banane ke baad jar me tomato or green chilli ki bhi ek smooth puree bana le. Dum allo banane ke liye aapke ingredients ready hain.


Ek pan me baki ka ghee garam kare. Ghee garam hone ke baad usme cumin seeds black paper bay leaf cinnamon clove black cardamom gheen cardamom dry red chilli add kar ke saute kar le.


Whole masale saute karne ke baad usme onion ginger garlic paste add kare or 2 minue ke liye saute kar le.

Onion paste ko saute karne ke baad tomato green chilli puree bana  add kar ke mix kar le. Degi mirch salt turmaric powder coriander powder garam masala powder dry pomegranate seed powder add kare or mix kar ke 4-5 minute tak cook kar le.


Curd ko ek bowl me nikal kar ek cup pani ke sath mix kar ke achi tarah se beat kar le. Tomato onion masala cook hone ke baad curd add kare or continue stir karte hue dahi ke thick hone tak cook kar le.


Fried potato dry fenugreek leaves and ek cup water add kare or greavy ke thick hone tak cook kar le. Potato ko greavy ke sath minimum 6-7 minute ke liye cook kare jis se greavy ke flavour potato absorb kar le. greavy ki consistency thick hone ke baad gas flame ko off kar de.


Rich and creamy and mouthwatering dum aloo ko green coriander leaves se garnish kare or garam garam dum aloo ko roti rice naan or paratha ke sath surve kare.

GAJAR KA HULWA


Gajar ka hulwa ko Himachal or punjab me gujrela ke naam se bhi jante hain. Gajar hulwa mostly North India me Punjab Haryana Delhi Himachal or pakistan ki ek famouse desert hai jise carrot pudding ke naam se bhi jante hain. Gajar or gajar ka hulwa ek healthy or low fat sweet dish hai jise mostly hum winters me he banate hain.
Gajar ka hulwa ki starting Mughal period me hui jinhone ek sweet banayi jiska naam unhone hulwa diya jo ki gajar ke sath banaya gaya tha or tabhi se is desert ka naam gajar ka hulwa pada.
Every winter humare ghar me gajar ka hulwa ek bade se kadai me banta tha jisme atleast 10ltr milk hum use karte the weinters ke liye gajar ka hulwa banane ke liye. Mumma har saal winter start hote he gajar ka hulwa banati thi. Or jo hume itna pasand hota tha ki hulwa banne se pehle he mai use taste karne ke naam per 2-3 baar kha leti thi 😝
Because gajar ka hulwa banante time usme milk and gajar sath me he dal ke use cook karte the so us process me time bahot lagta tha or specialy mai... hulwa khane ke liye itna wait kabhi nahi kar sakti so maine gajar ka hulwa jaldi banane keliye instant gajar hulwa try kiya jo taste me bahot he achaa hai or time bhi bahot kum lagta hai so ab jab bhi hume gajar ka hulwa khane ka dil kare is instant recipe ke sath hum kabhi bhi gajar ka hulwa enjoy kar sakte hai.
Instant gajar hulwa banane ke liye hum milk ko khoya or condense mile ke sath replace kar dete hai. Khoya or milkmaid ke sath bhi gajar ka hulwa utna he tasty hota hai jitna milk ke sath banane me.

INGREDIENT

Carrot - 1kg
khoya - 1 cup
milkmaid - 1 cup
Ghee - 200 g
Sugar - 1 cup or according to your taste
Almond - 10-15
Cashew - 20-22
Rainse - 12-13
Chironji - 2 tsp
 

METHOD --



Gajar ka hulwa banane ke liye sabse pehle gajar ko achi tarah se wash kar ke saaf kar le then cgajar ko food chpper or grater ki help se grate kar le.


Ek heavy bottom ki kadhai ko garam kare. Kadhai garam hone ke baad usme ghee or gajar add kar ke mix kare. Gajar ko half cook hone tak continue stir karte hue cook kar le.


Gajar ke half cook hone ke baad usme khoya or sugar add kre or achi tarah se stir karte hue cook kar le. Gajar ko cook akrte time gas flame ko midium he rakhe.



Jab gajar 90% cook ho jaye to usme milkmaid add kare or achi tarah se mix  kar ke gajar ko cook kare. Gajar ke cook hone ke baad gas flame off kar de.


Garam garam gajar ka hulwa ready hai. Dry fruits se garnish kare or surve kare.

GOBHI KA ACHAAR



Pickle ke bina koi bhi plate incomplete he lagti hai. Mere father ko khane ke sath me pickle humesha chaheye wo bhi less oil wala. Winters start hote he market me bahot sari cauliflower aa jati hai. So aaj maine apne father ke liye bhi less oil wala gobhi ka achaar banaya jo ki bahot he spicy and tasty bana. mere father ko mera pickle itna jyada pasand aaya ki unhone usi din se us pickle ko khana start kar diya πŸ˜†
Jab bhi hum market se pickle lekar aate hain to usme pickle kum or oil jyada hota hai jo mostly peoples ko pasanad nahi hota. Mere father bhi unhi me se ek hain jinhe pickle to khana but oil nahi chaheye. So un sab pickle lovers ke liye humare paas hai less oil wale pickles ki recipe jo tasty or easy  bhi hai.
Gobhi ka achaar banana bahot he easy hai. Bahot sare log jab pickle banate hain to vegitables ko boil kar ke pickle banate hai.
Mere ek friend ki mom bahot time se pickles bana rahi hain or unka bana hua pickle sabko bahot pasand aati. Jab maine first time unka banaya hua pickle taste kiya tha to mai to unse pack kara ke he le aayi thi. Aunty jab bhi pickle banati hain to vegis ko boil nahi karti wo unko 2-3 din ke liye dhoop me rakhne ke baad hepickle banati hai jis se pickle ki selflife badh jati hai.

INGREDIENT

Cauliflower - 1kg
Coriander seeds - 1 tsp
Dry red chilli - 7-8
Turmaric powder - 1/2 tsp
Cumin seeds - 1 tsp 
Mustarad seeds - 1tsp
fennal seeds - 1 tsp
fenugreek seeds - 1/2 tsp
ginger garlic powder - 1 tsp
Carom seeds - 1 tsp
Salt - as per your taste
Mustard oil - 1/2 cup

METHOD --



Pickle banane se pehle gobhi ko chote chote pieces me cut kar le or acchi tarah se wash kar le. gobhi ko wash karne ke baad 7-8 hour ke liye direct sunlight me rakh de. gobhi ko sunlight me rakhne se uska moisture khatm ho jaega or aapke pickle ki selflife badh jaegi.


Pickle ke liye masala banane ke liye ek blander jar me cumin seeds red chilli coriander seeds fennal seeds fenugreek seeds mustard seeds and carom seeds add kar ke bland kar le. Masala powder ko ek bowl me nikal kar isme salt or turmaric powder add kar ke mix kar le. Pickle banane ke liye humara masala ready hai. Is pickle masale ko aap bland kar ke air tight container me store kar ke bhi rakh sakte hai jis se aapko next time pickle banane me easy hoga.


Ek pan me oil garam kar le. Oil garam hone ke baad usme pickle masala  ginger powder garlic powder add kar ke add kare or mix karke raw smell niklne tak cook kar le.


Masale cook hone ke baad gas flame off kar de. Gobhi add kar ke achi tarah se mix kar le. Vinegar add kar ke mix kar le. Gobhi achaar ko jar me dal k store kar le.



Gobhi achaar ko 6-7 din ke liye rakh de. but daily jar ko shake kar ke achaar ko mix kar le. aapka yummy gobhi ka achaar ready hai.

VEG HAKKA NOODLE




Noodles ek aisi dish hai jise aaj kal bachhon se lekar bade tak sb bahot pasand karte hain. Evening me jab bhi hum market jate hain to roadside bahot sare chowmeen burger ke stall hume milte hain or har stall per utni he bheed hoti hai. Har stall per kids adult and seniors sab ki ek badi line hume in stalls per dekhne ko milti hai. 
Mujhe bhi chowmeen and hakka noodles bahot pasand hain but market me milne wale noodles bahot he oily and masale ki overdose unme milti hai jo mujhe bilkul bhi pasand nahi. Because wo bahot jyada oily hota hai and stomach ke liye bhi wo ek heavy diet hoti hai so mai apne or apni family ke lie ghar me he hakka noodles banati hu jisme bahot sari vegitables or less oil and masala mai use karti hu but taste me wo market bought noodle se bhi jyada tasty hote hain.
Mere causin bro ke kida ko bhi streetfood bahot pasand hai but outside meal is not so good for kids health so... mai unke liye unka favorite streetfood ghar me he bana kar unko khilati hu.
Hakka noodles ek bahot he easy to make dish hai. mere liye noodles ek all vegitables ka combo hai jisme mai jitni bhi vegis mere paas available hoti hain sab add kar deti hu jo ki healt ke liye bhi achi hoti hain because kids ko vegis khilana ek bahot he mushkil task hota hai so jab bhi kids special dish mujhe banani hoti hai main usme bahot sari vegis use karti hu jo kids ko bhi pasand aati hai or unke parents bhi khush.

INGREDIENT

Hakka noodle - 1/2 pack
green peas - 1/2 cup
capsicum - 1/2 cup
onion - 1
cabbage - 1/2 cup
green onion - 2-3 tsp 
white onion - 1
dark soya sauce - 2 tsp
red chilli sauce - 2 tsp
white vinegar - 1 tsp
schezwan sauce - 2 tsp
oil - 2 tsp

METHOD --


Ek bowl me 1 glass water boil kar le. pani ke achi tarah se boil hone ke baad usne half pack noodles add akre or soft hone tak boil kar le. Noodles ko overcook na kare otherwise wo sticky ho jaengi. noodles ke soft hone ke baad ek stainer me noodles ko nikal kar running water me wash kar le. Noodles ko cold water me wash karne se unki cooking process ruk jati hai and noodle overcook nahi honge. Noodles ko wash karne ke baad usme 1tsp oil add kar or hath se achi tarah se toss kar le. Noodles me oil mix karne se noodle nonsticky ho jati hai or ek dusre se chipakti nahi like as market.




Ek pan me 1 tsp oil heat kare. Oil ke achi tarah se garam hone ke baad usme choppes cabbage onion white onion capsicum and peas add akre or saute kar le. vegis ko hume half he cook karna hai because noodles me crunchy vegis he achi or tasty lagti hai.


Vegitables ko saute karne ke baad usme red chilli sauce or dark soya sauce add kare or toss kar ke achi tarah se mix kar ke 1-2 minute ke liye cook kar le.


Vegitables ko saute karne ke baad boiled noodles vinegar spring onions and schezwan sauce and a pinch of salt add akre or achi tarah se toss akr ke mix kar le.


Aapki spicy healthy and yummy hakka noodles ready  in restaurent style. surve with tomato sauce and enjoy your day.

PENUT CHIKKI




Penut chikki ek traditional Indian candy hai jise jaggery or penut se banaya jata hai. Chikki ko hum dry fruit chikki seasame chikki bahot sare flavours ke sath banate hain. But i love  penut chikki so much .
Chikki in Haryana gajjak ke naam se jyada famous hai. Haryana me chikki ke naam se shayud he koi is candy ko janta hoga so mere liye its mungfali gajjak :)
In rohtak mungfali ke bade bade stalls hum november starting se he dekh rahe hain. Agar last year se compair kiya jaye to is saal ek month pehle he mungfali market me available ho gayi hain. Ab jab mungfali he market me aagyi hain to mungfali products bhi sath me he market me dekhne ko mil jate hain. market me jis bhi shop or roadside stall per dekho mungfali gajjak or dates he milte hain.
Mujhe mungfali bilkul bhi nahi pasand but mungfali se bani gajjak mujhe bahot pasand hain. So maine apni favorite candy ko ghar me he try kiya or ise or jyada flavourful banane ke liye ise fennal or coconut ka flavour bhi diya. Meri gajjak itni jyada tasty bani ki mujhe taste karne ke liye sirf ek he roll mila :p
Jab main gajjak bana rahi thi to ghar me kuch guest aagye... meri causin.. wo bhi meri tarah he gajjak ki fan hai. Mere paas jitni bhi gajjak bani thi wo usko bhi pack kar ke le gyi and mujhe ek or big batch me gajjak banane ke liye request kar ke gayi. so today i'm making it again..

INGREDIENT

Jaggery - 1 cup
Penut - 1 1/2 cup
Fennal seeds - 1/2 tsp
Coconut - 1/3 tsp
Butter - for greasing

METHOD --



Gajjak banane ke liye mai moti wali mungfali use karti hu or khud he peal kar le saaf karti hu. Agar aap itna hardwork nahi karna chahte to market se mungfai ki giri bhi lekar use kar sakte hai. mungfali ki giri ko saaf kar ke half kar le.


ek nonstick pan me jaggery add kar ke melt kar le. jaggery ko melt hone ke baad 4-5 minute tak boil kar le or hard chashni bana le. Because gud ki chasni jitni jyada hard hogi aapki gajjak utni he jyada crunchy banegi. So ye aapke taste per bhi depend karta hai ki aapko soft chashni se gajjak banani hai ya hard chasni se. Mujhe jab mere appa ya amma ke liye gajjak banani hoti hai to mai soft chashni use karti hu otherwise hard chashni he use ki jati hai.




Jab tak humari chashni banti hai ek plate ko ulta kar ke plate or rollar ko butter or oil se achi tarah se greese kar le otherwise roll karte time gajjak rollar se chipak jaegi or cut karte time plate se. so ye ek important step hai.


Chashni ready hai ya nahi ye check karne ke liye ek bowl me pani le or usme jaggery ki kuch drops add kar de. Agar aapka gud pani me mix ho jata hai to abhi aapki chasni ready nahi hai or agar gud water me niche chala jata hai or mix nahi hota it means aapki chashni ready hai.


Chasni ke ready hone ke baad pan me halt kiye hue penut add kare or achi tarah se mix kar le. penut or jaggey ko achi tarah se mix karne ke baad gas flame off kar de.
