POTLI SAMOSA

Samosa waise to north indian dish hai but famous pure india me hai. Ye dish bade ho ya bacche sabki he favorite hai. Koi bhi celebration chahe wo birthday party ho guest ke liye welcome dish ho ya koi bhi other moment samose hmesha hum sbke celebratione ka main part hota hai.
Samosa ko aajkal uske traditional shape se alsg or bhi bahot sari shape de di gyi hain . Unhi sab me se ek hai potli samosa. Dekhne me ekdum potli ki tarah or taste me bahot he yummy or crispy sabko he bahot pasand aate hain. And i'm sure ki samose ka ye new look aapke guests ko bhi bahot pasand aaega or aap bhi apne cooking talent se sabko impress kar sakte ho. So let's make this appetizing snake today...


INGREDIENT 

For dough -
All purpose flour - 2 cup
Oil - 3-4 tsp
Carom seeds - 1/2 tsp
Salt - as per taste
Water - as needed

For stuffing -
Potato- 4-5
Peas - 2 tsp
Ginger - 1tsp
Green chilli - 3
Cumin seeds - 1 tsp
Coriander seeds - 1 tsp
Green coriander leaves - 2 tsp
Garam masala - 1/2 tsp
Salt - as per taste
Red chilli powder - 1/2 tsp
Oil - for deep frying

METHOD --

Ek bowl me maida salt oil ajwain add kar k achi tarah se mix kar le. Luck warm water ke sath semi tight dough ready kar le.

Samose ke liye dough ready hai. Ready kiye hue dough ko ek se do hour tak cover kar ke rakh de. Rest ke baad aap dough per white dots dekh sakte hain iska matlub hai ki aapka dough samose banane ke liye ready hai. Aap is step ko skip bhi kar sakte hain ahar aap juldi me hain to.
Jab tak aapka dough rest kar raha hai aap uski stuffing ready kar le. Potato ko boil kar ke peal kar le. Ek bowl me stuffing ki sari ingridient mix kar ke achi tarah se mesh kar le. Samose ke liye humari stuffing bhi ready hai.
Ready kiye hue dough se ek ball nikal kar patla lamba roll kar ke patli strips me cut kar le. In strips ko hum humari potli ko bamd karne ke liye use karenge.

Ab dough se equil size ki choti choti ball bana le.  Roller ki help se ek patli roti bel le. Roti ko jyada moti na rakhe otherwise samosa ache se cook nahi hoga. Ek tsp stuffing nikal kar roti per rakhe or charo side se utha kar band kar le.

Kuch is tarah se aap apni potli ko band kare. Pehle bamayi hui strip per thoda pani laga kar pani wali side ko potli ke charo side se bandh kar cross kar le. Sari potli isi tarah se rrady kar le.

Ek kadhai me oil garam kare. Oil ke achi tarah se garam hone ke baad half half kar ke samose fry kar le. Samose fry karte time gas flame ko low or midium he rakhe. Jyada garam oil me samose bahar se cook ho jaenge or andar se kacche reh jaenge. Sare samose aise he fry kar ke tissue paper per nikal le.

Gara garam potli samosa surve karne ke liye ready hain. Green chutni meethi chutni ua gomato sauce ke sath surve kare.

VEG BESAN CHEELA



Jab bhi jaldi me ho or breakfast banane ke liye jyada time na ho to ye cheela hmesha meri help karta hai kyuki isko banane me time bhi bahot kum lagta hai lr taste ke sath sath ye humari health ke liye bhi bahot acha hai.
Kyuki isme humbesan ke sath bahot sari vegetables use karte hain or almost oil free dish hai jo is healthy dish ko or jyada healthy banata hai. Agar aap dite per bhi hain to bhi ye cheela aapki dite ke liye bahot acha option hai.
So let's go.. Banate hain ek healthy and veg besan cheela...

INGREDIENT

Gram flaur - 2 cup
Onion - 2
Tomato - 2
Spinach - 1 cup
Green chilli - 3-4
Turmeric - 1/3 tsp
Salt - as per taste
Coriander powder - 1/2 tsp
Garam masala - 1/3 tsp

METHOD --

 Sabse pehle hum ek bowl me besan lekar pani ke sath mix karke achi tarah se whisk karte hue iska paste bana lenge. Besan ko aap jitna jyada whisk kroge aapka cheela utha he jyada soft or fluffy banega.

Besan ke paste me vegetables salt green chilli garam masala coriander powder add karke achi tarah se mix kar le. Agar aapko aapka mixture jyada patla lag raha hai to thoda besan add kar ke achi tarah se mix kar le.
 Ek nonstic tawa garam kare. Agar aapke paasnonsyic nahi hai to regular tawa garam karke half tsp oil dal kr spread kar le.nonstic tawa per aap is step ko skip kr skte hain. Garam tawa per thoda sa mixture dal kar spoon ki help se tawa per achi tarah se spread kar le.

 Cheele ki niche ki side ke golden hone tak cook kare or flip kar ke doosi side se bhi golden hone tak cook kar le.

 Dono side se golden hone ke baad cheela ko ek plate me nikal le. Baki ke mixture se bhi aise he cheele bana kar ready kar le.

Aap chahe to isko aise he surve kare ya cookie cutter se intresting shape me cut karke green chutni meethi chutni tomato sauce ya chilli tomato chutni ke sath surve kare.

AMRITSARI KULCHA WITHOUT OVEN


Kulcha maide se bana ek indian bread hai jise hum plane alag alag stuffing or topping ke sath banate hain. Amritsari kulcha sabse jyada famous hai or tasty bhi. Hara dhaniya or onion seeds ki toping ke sath banne wala ye kulcha bahot tasty hai.
Waise to kulcha hum tandoor me oven me bake kar ke he banate hain. But agar aapke paas tandoor ya oven nahi hai to bhi hum tasty kulcha bana sakte hain . Yes.. Hum gas per bhi ache kulche bana sakte hain wo bhi ekdum easy or instanly.
To chaliye aaj hum banate hain amritsri kulcha wo bhi bina oven ke.

INGREDIENT

All purpose flour - 2 cup
Curd - 1/2 cup
Sugar - 1 tsp
Oil - 2-3 tsp
Active yeast - 1 tsp
Baking powder - 1/2 tsp
Baking soda - 1/3 tsp
Green coriander leaves - 2 tsp
Onion seeds -2 tsp

METHOD --

 Ek bowl me maida curd sugar yeast oil baking powder baking soda add kar ke achi tarah se mix kar le. Luck warm water ke sath soft dough ready kar le. Dough ko hath se achi tarah se soft hone tak masal le.

 Ready kiye dough per hath se oil laga kar wet towel se cover kar ke 3-4 hr tak garam jagah per set hone ke liye rakh de.

Aap dekh sakte hain ki aapka dough 3-4 hour ke baad size me double or light ho jaega. Ye sign hai ki aapka dough kulcha banane ke liye ready hai. Agar aapka dough ready nai hai to 1-2 hr extra time ke liye rakh de. Because aapka dough ready nahi hai to aapke kulche ache nahi banenge.

 Ab ready hue dough ko ek baar fir se hath se thodi der ke liye masal le. Ab dough se equal size le balls bana le. Ek ball ko lekar hath se gol kar ke hath se thoda press kar le. Onion seed or coriander leaves rakh kar hath se tap karte hue round kulcha bana le. Agar aap hath se nahi kar sakte to roller se roll kar ke sare kulche ready kar le. Ek nontick pan garam kar ke usme 2-4 drop oil ki laga kar dono side se golden hone tak slow flame per cover karke cook kar le.

AALO METHI


Winters start hogyi hain or markets kitchen garden sab jagah hume fresh methi mil jaegi. Mere kitchen garden me bhi maine bahot sari green vegitables lagayi hain or unme se ek hai methi. Fresh or homegrown methi ka taste or khooshboo bahot he achi hoti hai. Methi ko hum kitni sari dish me use karte or har dish me ek alug taste jo hum sub ko bahot he pasand aata hai.

Methi se bani ek or meri faverite dish hai aalo methi. Fresh methi ki khoosbho or indian spices ke sath bani aalo meri winters me sabse jyada bnne wali dish hai.
Collage time me classes ke baad hum jab bhi bahar lunch karte to hum sabka sabse pehla order aalo methi ka he hota tha. Restaurent ka bana khana kisko pasand nahi aata or baat agar dry vegitable ki ho to sunte he muh me pani aa he jata hai. Aisi he winters me restaurent ki famous dish hoti hai aalo methi.

Meri family ko bahot pasand hai so maine socha kyu na ghar me he try ki jaye or result bahot yummy tha. Instant ready hone wali ye dish sbko bahot jyada pasand aati hai.
So i thaught ke aap sab ke sath bhi ye restaurent style aalo methi ki recipe jroor share karni chaheye.

INGREDIENT

Potato - 4
Fenugreek leaves - 1 cup
Onion - 2
Tomato - 1
Green chilli - 3-4
Garlic - 1 tsp
Curd - 2 tsp
Red chili powder - 1/2 tsp
Turmeric powder - 1/2 tsp
Cumin seeds - 1 tsp
Coriander powder - 1 tsp
Garam masala - 1 tsp
Black paper powder - 1/2 tsp
Pomegranate seeds powder - 1/4 tsp
Oil - 3-4 tsp
Salt - as per taste

METHOD --

Ek pan me oil garam kare. Oil garam hone ke baad usme cumin seed asafoetida or garlic add kar ke saute kar le. Garlic ko light golden hone tak cook kar le.



Garlic cook hone ke baad hum isme choped onion add kar ke  pink hone tak cook kar lenge. Onion cook hone ke baad usme sare dry spices add kar ke 30 second tak cook lenge. Hume masalo ko jyada der nahi cook karna hai otherwise spices jal jaengi.


Onion and spices cook hone ke baad tomato add karke 2-3 minute tak puppy hone tak cook karenge then curd add kar ke 4-5 minute tak continue chalate hue cook kar lenge jab tak curd puri tarah se mix nahi ho jaye or masale ke uper oil ki layer dikhayi dene lag jaye. It means humara masala cook ho gya hai.

Masale cook hone ke baad boiled potato chunks or methi leaves add kar ke achi tarah semix kar lenge. Cover kar ke 5-6 minute tak or cook kar le. Taste kar ke seasoning adjust kar ke gas off kar den.

Garam garam restaurent style aalo methi ko surving bowl me nikal kar roti paratha puriya pulaw ke sath bhi surve kar sakte hain.

BANANA KOFTA IN WHITE GRAVY



During navratri hum sabko kitna kuch new banane or seekhne ka mauka milta hai. Mujhe bhi mila or maine har baar ki tarah is navratri me bhi kuch new try kiya jo maine pehle kabhi nai banaya tha. Is navratri maine bnaye raw banana ke kofte wo bhi white gravy ke sath.

Without onion garlic turmeric without any masala iska taste bahot yumm tha sabne bahot pasand kiya. Aap chahe to ise navratri ke fast ke liye banaye ya kisi or special day ke liye. I'm sure ki aap sab ko bhi bahot pasand aaega.

Sirf kuch simple se ingredient or easy steps ke sath ready hai humari banana kofta curry white gravy ke sath.
So let's move to the kitchen...


INGREDIENT

For kofta -
Raw banana - 4
Paneer - 3-4 tsp
Penut powder - 2-3 tsp
Rock salt - as per taste
Green chilli - 2
Dry pomegranate powder - 1/4 tsp
Cinnamon powder - 1/3 tsp
Coriander leaves - 1 tsp
Oil - for frying

For gravy - 
Tomato - 3-4
Green chilli - 2
Cream - half cup
Rock salt - as per taste
Cumin powder - 1 tsp
Curry leaves powder - 1 tsp
Ghee - 2 tsp

METHOD --

 Raw banana ko boil kar ke peal kar le. Ek bowl me kofte banane ke liye sare ingredient add kar ke achi tarah se mix kar len. Is mixture ko hath se achi tarah se mash karne me 6-7 minute ka time lagta hai.


 Ready kiye hue mixture se small same size ke balls bana kar ready kar le. Agar fast ke liye bana rhe hain to penut powder use kare or agar kisi other day ko special banane ke liye aap ye kofte bana rahe hain to penut powder ki jagah besan use kar sakte hain.

 Ek kadhai me oil garam kare. Oil ko achi tarah se garam hone ke baad he usme kofte fry hone ke liye dale otherwise kofte jyada oily ho jaenge or tasty bhi nahi banenge.

 Garam oil me 3-4 kofte ya pan me jitne kofte easily aa jaye add kar ke crisp or golden hone tak fry kar le. Ek baar me jyada kofte add na kare because is se oil ka temprature low ho jaega or kofte oily. Fry kiye kofte ko kitchen paper per nikal kar side kar le.

 Ek jar me tomato green chilli add karke pury bna le. Ek pan me ghee garam kar ke cumin seeds add kar ke crackle hone tak cook kare. Tomato pury cream and dry spices add kar ke mix kare or 1 cup water add karke 7-8 minute tak cook kar le.

Gravy ke cook hone par usme kofte or dry curry leaves add kar ke lightly mix kare or 2-3 minute tak cook kar len.

Gurma garam raw banana kofta ko roti rice pratha or puri ke sath surve kare and enjoy your cooking.

KUTTU SPINACH UTAPPAM


Navratri me kuttu ke aate ka use hum sabse jyada karte hain. Kuttu puri, kuttu pakode, kuttu paneer kachori, kuttu roti jaisi bahot sari yummy dishes hum navratri me banate hain. Tasty to bahot hote hain but oily bhi utne he hote hain.

But aaj hum bana rahe hain usi kuttu ke aate ke sath ek tasty or oil free bhog. Yes... Bum bana rahe hain kuttu utappam spinach ke taste ke sath.

Kyuki hum bina oil se ye dish bana rahe hain to ye healthy bhi hai or spinach add kar rahe hain to tasty bhi bahot hai.
Banane me itna easy or instant ki aap jhutpat bina extra effort ke bhi bana sakte hain. Maine bhi ye kuttu utappam kal first time he banaya. Dinner banane ke liye late ho rahe the to socha ki kyu na kuch instant dish banayi jaye jisse mera time bhi cover ho jaye or sabko pasand bhi aaye.  Ek bowl me kuttu flour green chilli salt black paper powder spinach add kar kr achi tarah se mix kar le.

 Half cup water add kar ke soft dough ready kar le. Agar aapko dough jyada soft lage to thoda flour or add kar le. Ready kiue dough ko 5 minute ke liye cover kar ke rakh de.



 Ready kiye dough se choti choti ball bana kar hath se press karte hue round shape de kar sare utappam ready kar le. Ek nonstick pan or tawa garam kare. Ready kiye hue utappam ko dono side se golden hone tak cook kar le.


Garam garam kuttu spinach utappam ko green chutni tomato chutni ya dahi ke sath surve kare.

SAGO VADA


Aaj Navratri ka fifth day hai. Or aaj ke bhog kr dinner ke liye hum bana rahe hain sabudana vada. Sabudana vada ko hum mostly navratri me fast ke liye banate hain. Potato or penut powder ke sath bane ye sago vada bahar se crispy crunchy or andar se soft and spicy sago  vada bahot he tasty hota hai. Navratri ke in 9 dino me atleast 4-5 time to vade banaye he jate hain.
Waise to sabudana vada ek maharastra ki dish hai but pure india me ye dish bahot famous hai. Tomato chutni ya mint coriander chutni ke sath surve kiya jane wala sago vada sabko he pasand hoga. Meri mum ko bhi bahot pasand hai. During navratri ye unki first choice hoti hai bhog or dinner ke liye.
Sabudana vada Banane me bhi easy hota hai or time bhi jyada nahi lagta. Sago ko soak kar ke potato or penut ke mixture se banne wala vada sirf 10 minute me he ready ho jata hai. To navratri ho ya koi other special moment ho aapke har meal ko or special banane ke liye sago vada bahot acha option hai.

INGREDIENT

Sago - 1 cup
Potato - 2
Penut powder - 1/2 cup
Green chilli - 2
Black paper powder - 1/2 tsp
Rock salt - as per taste
Coriander leaves - 2 tsp

METHOD --

Sabudana ko running water me wash kar ke 2-3 hour tak 2 cup pani me soak kar le. Sago se extra pani nikal kar ek bowl me dal le. Boiled or mashed potato salt green chilli black paper powder coriander powder penut powder add kar ke hath se achi tarah mesh karte hue mix kar lenge or vade banabe ke liye mixture ready hai.

 Ready kiye mixture se same size ke balls bana kar unko vade ki shape de denge. Aap chahe to ise round star ya koi b apni pasand ki shape de sakte hain. Sare vade ready kar ke ek plate me rakh lenge.

 Ek pan me oil garam kar le. Oil ko pura garam hone ke baad he hum vade fry karenge otherwise vade bahot jyada oily ho jaenge or ache bhi nahi banenge. Oil garam hone ke baad 2-3 ya jitne aapke pan me ek baar me aaram se aa jaye htne vade dal k deep fry kar lenge. Dono taraf se golden or crisp hone tak fry kar lenge.

 Fry kiye vado ko kitchen paper per nikal kar extra oil kitchen paper per soak hone denge. Agar aap deep fry nahi karna chahte ya extra oily nahi chahte to heavy tawa per thoda oil garam kar ke vada ko tikki ki tarah bhi aap stir fry kar sakte hain.

Garam garam crispy sago vada surve karne ke liye ready hai. Dahi mint ciriander chutni ya tomato chutni ke sath surve kare.

STUFFED POTATO RICE BALL


Waise to aajkal navratri chal rahi hai so hum vart wala khana he  khate hain. But bahot se log aise bhi hain jo fast nahi karte. Hum unko kaise bhool sakte hain ;)

Un sab ke liye jinka fast nahi hai hum lekar aaye hain ek tasty easy or jhutpat ready hone wali dish. Bahar se crisp or andar se cheese ki surprise flood.

Ghar per bina btaye he koi guest aa jaye ya jhatpat kuch yummy khane ka dil kare to ek baar ye dish jaroor try kijiye. Mere paas raat ke kuch plane rice bache hue the to socha kyu na in leftover rice se kuch new try karu. To maine banaye ye potato rice ball cheese ki filling ke sath. Sirf 10 minute me he ready ho gye or ghar me bhi sabko bahot jyada pasand aaye. Ab se maine to decide kar liya hai ki aaj je baad rice ko kabhi waste nahi krungi. Waste kare bhi kyu jab itna yummy solution hai humare paas.

To socha aap sab ke sath bhi share karu. I am sure ki aap sab ko bahot pasand aaega or aap apni family friends or guest ko apni cooking se bahot impress kar sakte ho.
So here's the recipe..

INGREDIENT

Rice - 1 cup boiled
Potato - 1 cup meshed
Grean peas - 2 tsp
Gram flour - 2 tsp
Green chilli - 1
Red chilli powder - 1/2 tsp
Dry Bread crumbs - 1 cup
Ginger paste - 1/2 tsp
Coriander powder - 1 tsp
Garam masala - 1/2 tsp
Salt- as per taste
Cheese - for stuffing
Oil -for deep fry


METHOD --

 Ek bowl me plane rice meshed potato besan or dry spices add karke achi tarah se hath mash kar ke dough bana le. Dough ko ekdum soft hone tak mesh kare. Isme almost 7-8 minute tak ka time lagta hai.

 Dough ke soft hone ke baad usme blanch ki hui green peas add kar ke mix kare. Agar aap frozen peas use kar rahe hain to direct add kar sakte hain. Rice balls banane ke liye humara mixture ready hai.
 Ready kiye mixture se lemon size ke ball nikal kar hath se press kar ke chapta kar le. Center me ek cheese ka tukda rakh kar hath se round shape dekar ball bana le. Sare balls aise he cheese stuff kar ke ready kar le.

Ek plate me dry bread crumb le. Ready kiye hue balls ko is bread crumb me roll kar ke achi tarah se coat kar le. Sare balls ko bread crumb ne roll karke 4-5 minute ke liye rakh de.taki bread crumbs ball per achi tarah se set ho jaye or oil me nikle nahi.

 Ek kadhai me oil garam kare. Oil garam hone ke baad usme ready kiye hue balls ko half half kar ke fry kar le. Ek baar me jyada balls ko fry na kre. Otherwise oil ek dum se thunda ho jaega or hmare oil crispy nahi banenge or oily bhi ho jaenge.

 Balls ko 3-4 minute tak upar se crisp or golden hone tak fry kar le. Sare balls isi tarah se fry kar ke kitchen paper per nikal le or extra oil ko paper per niklne de.

Humare crispy and cheesy potato rice balls ready hain. Green chutni or tomato sauce ke sath garam garam surve kare.
